Chef Yoshinori Kinomoto
With over 28 years of experience in Japanese cuisine, Head Chef Yoshinori Kinomoto brings his keen sense for the seasonality of sea produce and insightful experience in preparing fish, promising a wide variety of creative, fresh maritime flavours. Proficient in many culinary techniques, especially kaiseki and Edomae sushi, Chef Kinomoto devotes meticulous effort to his kappo cuisine at one MICHELIN Star Zuicho, carefully curating a personal experience for each diner with expert skill and hospitality.

Chef Kotaro Nakashima
Fukuoka Prefecture native Kotaro Nakashima began his culinary career when he was just 19, refining his talents in traditional Japanese kitchens and international restaurants while developing a style rooted in classic techniques, yet open to subtle modern influences. As the owner and chef of two MICHELIN Star Kutan in Tokyo, he serves up traditional Japanese Kaiseki cuisine featuring ingenious contemporary twists, delicately balancing flavours as he creates exquisite presentations that captivate the senses.
