For "8-Hand MICHELIN Alchemy: Love Letter of Southern Italy", Don Alfonso 1890's Head Chef Federico Pucci will join forces with three esteemed MICHELIN-star talents Angelo Aglianò, Giuseppe de Vuono, and Luigi Troiano to curate an unparalleled and exclusive gastronomic experience that pays tribute to Southern Italy's culinary heritage. Each Chef represents a different region of Italy – from Tuscany to Naples all the way south to Sicily, showcasing traditional recipes with a modern twist paired with exquisite wines. Crafted with passion and flair, this dinner is a love letter that encapsulates the flavours and traditions of Italy that have captivated the world. From the sun-soaked coasts of Sorrento and Sicily to the vibrant flavours of Naples in Campania, each region tells a distinct story on the plate, unified by a shared devotion to la dolce vita.

VIEW MENUEach dish in this menu is a story crafted to linger in taste and memory. Begin on the coasts of Sorrento and Sicily with Carpaccio di Cappesante and Brittany Blue Lobster, then savour the region's rustic charms with artisanal linguine, Bottoni pasta and Risotto with sea urchin and sea asparagus. Savour more of the coast's vibrant and rich flavours with Wild Dover sole and Mierel duck cacciatora, before finishing with a sweet and traditional Honey Sorbet.

Federico Pucci
Head Chef of Don Alfonso 1890, Chef Pucci is passionate about true Italian flavours, striving to make each bite evoke the sun, sea, and land of his homeland. Inspired by the farm-to-table philosophy, he applies classic techniques and incorporates innovation in his Mediterranean cuisine, with a focus on preserving the authenticity of the ingredients.
Angelo Aglianò
As the visionary behind one MICHELIN Star Tosca di Angelo at the Ritz Carlton Hong Kong, Sicilian Chef Aglianò creates masterful seafood dishes that honour nature's bounty. An expert in blending oceanic flavours with Italian artistry, his culinary skills show the influence of his youth growing up on the Mediterranean coast.
Giuseppe de Vuono
Messina-born Chef de Vuono is the creative force at the two MICHELIN Star Octavium, infusing its contemporary menu with Sicilian flair and flavours. He places great emphasis on sourcing the best seasonal ingredients from across the world and making everything in-house from scratch, from bread to desserts.
Luigi Troiano
At the helm of two MICHELIN Star Noi by Paulo Airaudo at Four Seasons Hong Kong, Chef Troiano serves up contemporary Italian cuisine that is often affectionately called "Italian omakase".
