Meet the Chefs

Chef Federico Pucci
Originally from Prato in Tuscany, Head Chef Federico Pucci of MICHELIN Selected restaurant Don Alfonso 1890 takes great pride in Italian cuisine and capturing the essence of Naples through a farm-to-table philosophy that focuses on the seasonality of products. Calling upon more than a decade of gastronomic expertise, he serves up classic dishes from Sant'Agata made with authentic flavours and techniques, as well as innovative culinary works of art that cater to Macau's local palates.

Chef Ernesto Iaccarino
As heir to the Iaccarino family that founded MICHELIN starred restaurant Don Alfonso 1890 in Sant'Agata sui due Golfi, Chef Ernesto Iaccarino continues to uphold the local culture and ancient traditions of the Amalfi Coast. An adherent of the farm-to-table philosophy, he believes in using high-quality ingredients and taking full advantage of the fresh local fruits and vegetables grown at the family-owned and operated Le Pieracciole farm for more than three decades.

Chef Andrea Aprea
At two MICHELIN Star restaurant Andrea Aprea in Milan, the eponymous Naples-born founder and chef pursues a new understanding of the relationship between food and the experience of the senses. Intertwining the richness of traditional Neapolitan cooking and the innovation of today's haute cuisine, Chef Andrea Aprea infuses the Italian gastronomic scene with the sense of a quest between memory and modernity, anteriority and contemporaneity.
